The type and HP being shown would ruin fighting a new Pokemon for a casual fan; figuring out the typing is kind of a fun part of the challenge when faced with something new you don't recognize. The same is true for giving you the whole type chart. The map is fine.
For more casual gamers (who comprise probably a majority of purchasers) it's more fun to learn as you go, figure it out.
I wouldn't have liked being a kid and having it all laid out for me when I first played Silver; I loved the sense of discovery and learning the world, immersing myself in it. Since I know everything about Pokemon a lot more in depth now, it wouldn't make a difference to me that much, but in remembering that experience I think I like it how it is.
