The characters are irrelevant but plot line isn't. Basically in the end there is going to be final war between people of westeros and white walkers and wall needs to fall for that to happen which has never happened since it was build thousand years ago. Hence wall is the most part of the entire series.
Regarding title, the actual title of the show should have been A Song of Ice and Fire but probably that would have been too obvious hence they named the entire series after the first book.
