And that's in addition to cooking the heavy meals, making sure the drinks are cold and getting desert ready.

why are you making the subs yourself just buy premade ones at the store I do that all the time

That's a good start, just buy some really long sub breads and make tons of 6' subs the night or two before.
For drinks just have an ice pack for soda and have people help themselves. Also maybe Crystal Light/tea in pitchers.

Girl, my mom would skin me alive if I did that. She's very adamant about everything we cook being made from scratch. Stuff in boxes or things that are pre-made are big no-no's in my household.

It might seem weird, I know, but I grew up like this. I never even had boxed cake mix until I was like 13. EVERYTHING my mom makes is from scratch, and if you're feeding her something that isn't made from scratch, you'd better not tell her so or be prepared for a barrage of "it's not as good as homemade" comments. My dad is a bit more lenient, though.
