Just because a song doesnt have a bridge it doesnt mean its unfinished. It means its just different from the other basic verse - pre chorus - chorus- verse 2 - pre chorus - chorus - bridge - chorus pop songs on the radio.

Talk That Talk isn't as bad as people make it out to be but it's kinda useless aside from WFL, WHYB (it's still a gem even though it isn't aging well). The other good songs that don't measure up are Cockiness, Ass Pt II, DOL, Watch n Learn and Farewell. Everything else eventually gets old, especially the deluxe tracks.
As for the albums talk, I'm really not sure what my fave is atm (they tend to change) but Unapologetic is probably one of my faves, together with Loud and Rated R. TTT may have been rushed but it has its great moments.
