You should get the "The Essentials" (but definitely the US version!) or "Greatest Hits".
The first disc of either compilation album covers 1990-1995, the second disc 1995-1999. Based on what songs you like most so far I'd recommend you to get "The Emancipation Of Mimi" (2005), "E=MC˛" (2008), maybe "Rainbow" (1999), and "Daydream" (1995) first. Her magnus opus, however, is "Butterfly" (1997) but it might be even greater to experience when you know Mariah a little better. Her first two albums are stellar but all in all not as instant as the ones I suggested you. So you might have to give the first disc a few extra spins until you recognize all its glory.
