I love how Ethiopians speak English like it's Amharic.

What other languages besides Amharic and English does your dad speak? If he speaks Tigrina, then he was probably born on the border of Tigray Region and Eritrea which would explain why he might be mixed with Italian. When they (Italians) briefly conquered Northern Ethiopia (now known as Eritrea

), they often had kids. This is not to say that your dad couldn't be from any other region but that region is where it commonly happened.
