The thing is Fairy was
just introduced so even with typing changes there are less of them than the rest of the types. It's a really good defensive type to get paired up with, being weak to only Poison and Steel, neither of which are particularly relevant offensive types outside of Scizor and a few others. It made Azumarill and Togekiss more durable and it gives Klefki bonkers typing (weak to only fire and ground, with NINE resistances and two immunities).

I did in Gen 5 but it was kind of just for kicks. I couldn't be bothered with breeding in that game and it was fun to make ridiculously broken Pokemon. I'm glad you can't in Gen 6, and Pokebank will keep out at least the ridiculous hacks. I'm not convinced it will stop all hacks.
