Say, the last 7 days chart.

Does it mean for example, I look at it Thursday, would the 7 days be from that Thursday to the previous week's Thursday, OR

that current Thursday to the previous week's Friday?

Yes, it's a rolling chart.

So, if you're looking at today's 7-day chart right now, it includes all songs played from last Wednesday (at 8:58am ET) until now.

I haven't used Last.fm is ages, but if I remember correctly it accumulates the last seven days on which you listened to any music. For example: let's say you only listen to music on Monday, Wednesday and Sunday; then the "last 7 days" chart would be based on the following days in bold:

The lenght of the gap between days that you listen music on is irrelevant if I'm not mistaken. Therefore, to answer your question: if you listen to music on a daily basis the chart would be taken from the current Thursday back to last week's Friday.
