It was signed for 6 seasons, and it was actually Ryan Murphy's decision to end the show after Season 6, not Fox. It is still hugely profitable for them and their most-watched show in it's target demographic.

This year it averaged less than a 1.0 in the 18-49 demographic.
Murphy can claim that he was the one who wanted it to end, but its flop ratings are why it's ending.
I can't see how it's hugely profitable in other ways given that it can't even chart in the H100 anymore.
