No. Adele was definitely meant to sing them. The songs productions probably would have been changed and it would have just taken the sound away that makes it so great. I can't think of anyone else pulling her songs off. She's a powerhouse.

probably. 21 has enough across the board appeal that it would become at least some kind of hit no matter what if people were exposed to it. assuming rolling in the deep would still be a big hit, plenty of people would've bought it.
