Simply and obviously The Incredibles. The ending really hinted at a sequel and yet it never came.
They could easily add another film on since it's different from the other Pixar movies with more of the action/adventure genre.

Let me just go through them all:
Toy Story 4 - isn't TS4 already confirmed or something anyways? Either way, TS3 was a perfect ending.
A Bug's Life 2 - not sure what they'd do.. very late as well.
Monsters, Inc. 2 - we already got Monsters U, they shouldn't milk it.
The Incredibles 2 - the only really necessary one.
Cars 3 - how about
no.
Ratatouille 2 - love the original, but not sure what they'd do.
WALL-E 2 - no thanks.. or they could at least add some dialogue, maybe.
Up 2 - not sure what they'd do.
Brave 2 - still haven't seen the first one.
