Couscous salad
Ingredients:
Salad:
1 1/4 vegetable stock
1 (5.7-ounce) box uncooked couscous
1/2 cup thinly sliced green onions
1/2 cup diced radishes (about 3 large)
1/2 cup chopped cucumber
1/4 cup chopped bell pepper
Preparation:
Dressing:
2 tablespoons vinegar
2 tablespoons extravirgin olive oil
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 garlic clove, minced
some freshly squeezed lemon juice
To prepare salad, bring vegetable stock to a boil in a medium saucepan; stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Spoon couscous into a large bowl; cool slightly. Add the other ingredients; toss gently to combine.
To prepare dressing, combine vinegar and remaining ingredients, stirring with a whisk. Drizzle dressing over salad; toss to combine.
Zucchini pizza boats
Ingredients:
1 medium zucchini
sliced tomatoes
spinach
bell pepper
cheese (optional)
Preparation:
Cut zucchini in half and scoop out flesh. Chop flesh into small pieces, mix with sliced tomatoes and cut up bell pepper and warm up. Cook spinach separately. Put zucchini halves in a baking dish and fill them with everything (I put the sliced tomato/bell pepper/zucchini flesh mixture first, then spinach on top). Cheese can be added on top. Bake in oven for about 15-20 mins at 180°C/350°F.
Cupcakes (vegan)
INGREDIENTS
1 cup soy milk
1 teaspoon vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon almond extract, chocolate extract, or more vanilla extract (optional)
1 cup all-purpose flour
1/3 cup cocoa powder, Dutch-processed or regular
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
INSTRUCTIONS
Preheat oven to 350°F and line a muffin pan with paper or foil liners.
Whisk together the soy milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add the sugar, oil, vanilla extract, and other extract, if using, to the soy milk mixture and beat until foamy. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat until no large lumps remain (a few tiny lumps are OK).
Pour into liners, filling 3/4 of the way. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.
