I just have a question and I can't find any answers on google (not that I searched that well ) but when I sync my new iPod Touch to iTunes, will my plays be gone or will they stay the same?
Plays on a song is important to me when many of them has a lot (at least imo) so please answer
It will attach the plays already on songs in your library to the songs it puts on your iPod, and when you sync it again after playing songs on the iPod, it goes the other way. So yes, everything will stay updated.

it doesn't matter what devices you sync to your iTunes, the content (the songs in there including the tags, artwork and playcount) won't change
