It's an acquired skill, it takes a lot of training your ears.
But it's like learning a language. Go hit a key on the piano. Hit it a million times. It will always play the same note. If you can just memorize what that note sounds like, and the difference between it and the notes a semitone away from it, you can figure out songs by ear.
