There are always arguments about whether it should be based on economy, history/culture, or simply geography, specially for countries like Greece and the Visegrad 4 countries.
How do you personally define it?

I associate it with politics rather than geography. So former Warsaw Pact countries + other Balkan countries.

lol I was debating with someone about this a few weeks ago. I said Greece was Eastern Europe and they were shocked and said it's not because it's next to Italy, Spain and Portugal. And I said it is because it's next to Turkey and as far East as Russia is. I think he considers Greece as Southern Europe, regardless of how far East or West it is.

They're usually in South-Eastern Eu group but it's a mess, esp with Croatia whose shape is wierd af and has influences from Central, Southern and Eastern Eu and can be found placed in any of the three.
