That sounds like a kind of job that people usually do on weekends in addition to their main (40hrs+) position, not one to live or build impressive experience off. I think you should look for another one.
As for more experienced and more educated people getting paid more, I don't find anything wrong with it.

You get paid less because the government deems that younger people have less expenses and most likely still depend on their parents. Your wage seems messy though, are you getting taxed? you might be on the wrong tax code, HMRC mess everyone up. If not your manager is doing your wages wrong. Also, if you have a break, (I assume you don't) but yea if you do, you don't get paid for it.
Edit: It might just be a cut-off date thing, mine is a week before payday. you're probably getting paid what you've worked up until your cut-off date. Next month you'll most likely get a full month pay.
